This is a combination salad and vegetable
and it is especially great with grilled chicken!
Beets like to “share” their brilliant red color
with anything around, so that is why the two
vegetables are tossed separately with the mild
dill dressing. Any greens can be used, but I es-
pecially like the little bite of arugula when it is dressing and let marinate for just a few minutes
used to line the platter under the vegetables.
Beets are best roasted. They can also be
boiled, but the flavor is not as intense. (Be sure
to adjust the roasting time if the beets are es-
pecially small or especially large). This salad is
excellent chilled or it can be served at room tem-
perature.
Roasted Beet and Sugar Snap Salad
Serves 4
3 medium beets, washed and trimmed
1/2 pound fresh sugar snap peas
Dry beets with paper towels. Place in center
of large piece of heavy duty foil, spray lightly
with cooking spray and close tightly. Roast at
375 degrees for 1¼ hours or until a skewer
pierces beet easily through foil.
Open foil and let beets cool at least 30 min-
utes, then remove and discard skin. Slice beets
¼ inch thick. Set aside at room temperature.
